Firehouse Subs (1525 Baytree Rd) Score: 91 A

Violations: Turkey sliced this morning between 7:30 and 8 am still at 47 degrees after four hours. PIC reports turkey is sliced 1st. Deli meat is sliced, portioned and weighed, wrapped and placed into deep plastic pans and then tightly covered. Turkey discarded. Recommend monitoring other items in order it was sliced and prepped. Suggest spreading out on metal pans to cool quickly in RIF. If not cooled in 4 hours from time sliced and prepped please discard as needed. Develop plan that works for your establishment. Some restaurants keep items being prepped on ice to keep temp down. Remember to cool back down to 41 degrees in 4 hours and watch temps during prep time so temps don't elevate to danger zone.

Subway (340 Norman Dr) Score: 90 A

Violations: Observed employee taking money at the register and then started putting on gloves while asking to take my order without washing her hands. In use scoop for tuna salad observed on shelf under make line with dried tuna debris.
