February 4th

Ellianos (1309 Baytree Rd) Score: 85 B

Violations: No Certified Food Manager for establishment. Please show proof of having CFSM. This was discussed at the last inspection. Correct by 3/4/13. PIC lacks knowledge of how to properly W/R/S all food contact surfaces. Trained employees today on how to set up 3CS, use test strips and w/r/s dishes and then air dry. Old dish water in sink from last night per PIC. No sanitizer water set up at 3CS. PIC reported no dishes have been w/r/s today. PIC reports no dishes have been W/R/S today. Ice bin at front window noted to have build up of mold like substance around lid and rim of lid. Dirty ice scoop on top of ice bin with coffee mix splatter. Observed employee with ineffective hair restraint. Employee noted with long hair not fully restrained. Right door of RIC falls off hinge when opened.

February 6th

Steak N' Shake (980 N St. Augustine Rd) Score: 86 B

Violations: PHF items being held above 41 degrees in various CH units. Sausage patties in pan on back of grill held at 89 degrees. No working thermometer to check thin foods. Please purchase ASAP in order to verify cook temps of hamburgers, sausage, etc. Need tip sensitive thermometer. Food thermometer being used to temp item in WIC was not calibrated. Thermometer calibrated in ice water. Continues to be heavy black buildup on floor under all equipment in front area. Food also on floor under fryer. RIF (right side) soiled with grease. Clean throughout establishment please.

 

February 7th

Mama June's Country Buffet (3286 Inner Perimeter Rd) Score: 91 A

Violations: Cold hold items not correctly held at 41 degrees Fahrenheit or cooler as required: melon slices, pasta salad, chicken salad, raw fish, cottage cheese, and chicken pieces. Pasta salad not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenhiet in 6 hours or less or from 135 degrees Fahrenheit to 70 degrees Fahrenheit in 2 hours or less and was observed in covered 6-8" tubs in the walk-in cooler. Pasta was cooked and then set out to cool at 11 AM and pasta was 54-56 degrees Fahrenheit at 3 pm. COS, salad was set out properly on shallow pans and employees cooling food are and will be (if they were not working at time of inspection) retrained on the proper methods of cooling food. Chicken for chieken salad not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenhiet in 6 hours or less. Chicken began cooling at 9pm last night and was observed in the walk-in cooler at 48 degrees Fahrenheit at 3:30pm today when all other products that were present in cooler last night were 42 degrees Fahrenheit or less. COS, chicken was discarded upon inspector request. Melon slices were also observed at 50 degrees Fahrenheit in tightly covered 6-8" plastic pans after being cut at 1:00 and 2:30. The melon slices were then being placed on the bar without being cooled properly. COS, proper cooling method was demonstrated to the kitchen prep personnel and management promised to monitor better in future, melon slices were properly set out to cool in the remaining time at the time of inspection. Corrected On-Site. 

 

February 11th

Hardees (2901 N. Ashley St) Score: 89 B

Violation: Observed chicken, hamburger and biscuits uncovered in walk in freezer. Observed debris in soda dispensing spouts. Observed dried vegetable debris on vegetable slicer. Observed chemical bottle with not labelled with proper contents Observed chemical bottles and wiping cloths stored on tabletop where food is prepped. Chemicals and wiping cloths were stored to prevent contamination. Observed sausage cooling in the WIR.
