Restaurant Inspections: Zacadoo's, Cracker Barrel

January 5th 

Cracker Barrel (1195 St. Augustine Rd) Score: 76 C

Violations: Observed employee who displays symptoms of a communicable disease- open sores on the forearm above the wrist- handling food. COS, open wounds were bandaged and observed to be properly dressed by management. Management stated that they will be more observent of employees working with open wounds and ask them to bandage open wounds. Observed grill station last used more than 24 hours ago not cleaned after last use- observed soiled pancake dispensers, trays, utensils and grill area. Please use clean and sanitized utensils and place in use cooking utensils on a clean surface while in use. COS, all utensils that were identified as soiled were cleaned by management upon request. Observed potentially hazardous food held using time as a public health control with time marking from 30 minutes previously and documented that it was 40 degrees at time of use at 2:30PM. At 3pm the eggs were observed at temperatures from 66 to 78 degrees Fahrenheit. During a temperature study conducted by us at time of inspection, it was found that the eggs only rise 14 degrees during 1/2 hour in a 90-95 degree kitchen. Because of the suspected dry-logging of the time log for the eggs, we recommended disposal of the 2 flats of eggs found out of temp at 3pm. COS, management disposed of 2 flats of eggs at time of inspection, put out another flat of eggs and started a new time marker.

 

Zacadoo's (1501 N. Ashley St.) Score: 88 B

Violations: Fan guards in WIR,CHU,RIR need to be cleaned to prevent contamination of uncovered food. Make sure sausage is date marked properly. Observed sausage being cooled in WIR covered at 74F. Observed leaky handwashing sink. 

McDonald's (2102 N. Ashley St) Score: 78 C

Violations: No hand soap at handwashing sink used by employees. Potentially hazardous food not held at 135 degrees Fahrenheit or above. Food held past time marked when using time as public health control.
No time marking on container of food when time as public health control is used.Timers not being used, Dials not being used, Dials need repair. Chemicals not stored to prevent contamination. Keep food holding area clean from spilled food. No handwashing sign provided at a handsink used by food employees. Observed single service items stored on floor under handwashing sink.Observed single service cups stored in contact with garbage can. 


January 6th

Burger King (1801 N Ashley St) Score: 87 B

Violations: Observed ham being put back in the fridge after TPHC discard time had expired with discard time being thrown in trash. Observed soiled vegetable press.


January 10th

Slap Daddy's (914 Baytree Rd) Score: 82 B

Violations: No soap located at back handwashing sink. Trash can pushed in front of it when arrived for inspection. No hot water noted at this sink. Front handwashing sink with sign on it not to use. Sink is leaking underneath. No paper towels at the front sink. Manager reported they will use front handwashing sink until hot water is at back handwashing sink. Bucket will be placed underneath to catch water. Roll of paper towels were placed at this sink but does not fit dispenser. Cooked poultry not reaching 165 degrees Fahrenheit for 15 seconds. Chicken wing final cook temp was 154 upon removing from fryer. COS- Wings cooked further to reach proper temp. Discussed importance to fully cook wings. Food thermometer not accurate within +/- 2 degrees Fahrenheit. Hot water not provided/shut off at back employee handwash sink.
